Grilled Chicken and Watermelon

Ingredients:
- Assortment family pack of chicken
- 8x Corn
- Watermelon
- Badia Mojo Marinade
- Salt, pepper, garlic powder
- Oil (olive oil, avocado oil)
Optional: Tajin powder for watermelon
Recipe:
- Cover your tray or container with Badia Mojo marinade
- Place the chicken directly on top of the marinade. Pour additional marinade over the chicken
- Cover with foil and refrigerate for at least 3 hours
- After marinating, fire up two grill zones to medium heat
- Place chicken on the grates over one zone Optional: Season with salt, pepper, and garlic Monitor the chicken and turn occasionally
- While the chicken grills, slice zucchini lengthwise
- Season zucchini and corn with oil, salt, and pepper on a tray
- Place corn on the second grill zone
- If there’s space, add zucchini to the same zone (it cooks quickly)
- Increase heat on the chicken zone to begin searing Check internal temperature: chicken should reach 165°F
- Move chicken to a tray and place on the top rack to stay warm
- Slice watermelon and fire up the sear burner
- Sear watermelon for 30 seconds per side until grill marks appear
- Plate everything on a tray (sprinkle tajin onto watermelon if desired) and serve immediately
